    • 2 cloves garlic, minced
    • 1 medium carrot, julienned
    • 1-inch piece of ginger, grated
    • 1 cup snap peas
  • For the sauce:
    • 1 tablespoon rice vinegar
    • 1/4 cup soy sauce (low sodium preferred)
    • 1 tablespoon honey or maple syrup
    • 2 tablespoons sesame oil
    • 1 teaspoon cornstarch
    • 2 tablespoons water
  • For garnish:
    • Sesame seeds
    • Chopped green onions

Instructions:

  1. Prepare the tofu:
    • Press the tofu for 10 minutes to remove excess moisture. Cut into bite-sized cubes.
    • Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the tofu cubes and cook until golden brown on all sides, about 5-7 minutes. Remove from the skillet and set aside.
  2. Cook the vegetables:
    • In the same skillet, add the remaining tablespoon of vegetable oil. Add garlic and ginger, cooking until fragrant (about 30 seconds).
    • Toss in the broccoli, carrots, and snap peas. Stir-fry for 3-4 minutes.
    • Add the bell peppers and cook for another 2 minutes, ensuring the vegetables are tender-crisp.
  3. Prepare the sauce:
    • In a small bowl, whisk together soy sauce, sesame oil, rice vinegar, honey (or maple syrup), cornstarch, and water.
  4. Combine everything:
    • Return the tofu to the skillet with the vegetables. Pour the sauce over the mixture and toss to coat evenly.
    • Cook for another 2-3 minutes until the sauce thickens and everything is heated through.
  5. Serve:
    • Transfer the stir-fry to a serving dish. Garnish with sesame seeds and chopped green onions. Serve hot over steamed rice or noodles.
