Description

These ultra-fudgy keto brownies are so rich and decadent, you won’t believe they’re low-carb! Made with almond flour and sugar-free sweetener, they deliver all the chocolatey goodness of traditional brownies without the carbs. Perfect for satisfying your sweet tooth while staying in ketosis!

Ingredients

  • ½ cup butter, melted
  • 1 cup powdered erythritol (or your preferred keto sweetener)
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • ⅓ cup unsweetened cocoa powder
  • ½ cup almond flour
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • ½ cup sugar-free chocolate chips (optional)

Instructions

Step 1: Preheat your oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper, leaving some overhang for easy removal.

Step 2: In a large bowl, whisk together the melted butter and powdered erythritol until smooth.

Step 3: Add the eggs and vanilla extract. Whisk until well combined and slightly fluffy.

Step 4: In a separate bowl, mix together the cocoa powder, almond flour, baking powder, and salt.

Step 5: Add the dry ingredients to the wet ingredients and stir until just combined. Don’t overmix—some small lumps are okay.

Step 6: If using chocolate chips, fold half of them into the batter and reserve the rest for topping.

Step 7: Pour the batter into the prepared pan and spread it evenly with a spatula.

Step 8: Sprinkle the remaining chocolate chips on top if desired.

Step 9: Bake for 20-25 minutes, until the edges are set but the center is still slightly soft. A toothpick inserted should come out with a few moist crumbs—not wet batter.

Step 10: Let the brownies cool in the pan for at least 15 minutes before lifting them out using the parchment paper.

Step 11: Cut into 12 squares. For the cleanest cuts, refrigerate for 30 minutes before slicing.

Tips

  • Don’t overbake! These brownies are best when slightly underdone in the center for that fudgy texture.
  • Let the brownies cool completely for easier cutting and the fudgiest texture.
  • Use a powdered sweetener rather than granulated for a smoother texture.
  • Store in an airtight container in the refrigerator for up to 1 week, or freeze for up to 3 months.
  • Warm slightly in the microwave for 10-15 seconds for an extra gooey treat.
  • Add chopped nuts like walnuts or pecans for extra crunch and healthy fats.
