Ingredients

For the filling:

For the coating:

  • 1 cup sugar-free chocolate chips
  • 1 tablespoon coconut oil

Instructions

Step 1: In a mixing bowl, beat together the softened cream cheese and butter until smooth and creamy.

Step 2: Add the powdered erythritol and vanilla extract. Mix until well combined.

Step 3: Line a baking sheet with parchment paper. Using a small cookie scoop or spoon, portion the mixture into 18 small balls (about 1 tablespoon each).

Step 4: Place the balls on the prepared baking sheet and freeze for 30 minutes until firm.

Step 5: While the fat bombs are freezing, melt the chocolate chips and coconut oil together in a microwave-safe bowl. Heat in 30-second intervals, stirring between each, until completely smooth.

Step 6: Remove the frozen fat bombs from the freezer. Using a fork, dip each ball into the melted chocolate, coating completely. Let excess chocolate drip off.

Step 7: Return the coated fat bombs to the parchment-lined baking sheet.

Step 8: Freeze for another 30 minutes until the chocolate is set.

Step 9: Store in an airtight container in the freezer for up to 3 months, or in the refrigerator for up to 2 weeks.
