- 2 cups cooked shredded chicken (rotisserie works great!)
- 1 cup long-grain white rice
- 2 cups low-sodium chicken broth
- 1 cup whole milk or unsweetened almond milk
- 1/2 cup frozen peas and carrots
- 2 tbsp butter
- 1 tsp garlic powder
- 1/2 tsp onion powder
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Step-by-Step Instructions:
- Start with the base: In a medium pot, melt the butter over medium heat. Add the rice and stir for about 1 minute until it’s lightly toasted—this adds amazing flavor!
- Add your liquids: Pour in the chicken broth and milk. Stir gently and bring to a soft boil.
- Season it up: Add garlic powder, onion powder, salt, and pepper. Reduce heat to low, cover, and let it simmer for 15 minutes.
- Make it complete: Stir in the shredded chicken and frozen veggies. Cover again and cook for another 5–7 minutes until the rice is tender and creamy.
